Copycat Autumn’s Gold Grain Free Granola Recipe

This homemade grain-free granola is inspired by the almond, coconut and honey flavors associated with Autumn’s Gold. It is an independent Paleo Tiger recipe, not the manufacturer’s formula. It combines nuts, seeds and tiger nut flour for crisp clusters.

Ingredients

1 cup roughly chopped almonds; 1 cup roughly chopped pecans; ½ cup sunflower seeds; ½ cup pumpkin seeds; 1 cup unsweetened coconut flakes; 3 tablespoons tiger nut flour; ½ teaspoon cinnamon; ¼ teaspoon salt; ¼ cup honey (or maple syrup); 3 tablespoons coconut oil; ½ tablespoon vanilla extract.

Method

Heat the oven to 300°F (150°C) and line a large baking sheet with parchment. Combine the nuts, seeds, coconut, flour, cinnamon and salt. Gently warm the honey and coconut oil, then stir in the vanilla. Mix into the dry ingredients until evenly coated.

Spread evenly on the tray. Bake for about 30–35 minutes, stirring gently after 20 minutes. Watch closely toward the end and remove when golden; ovens and piece sizes vary. Let the granola cool completely before breaking it into clusters.

Make it work for your household

This version contains almonds, pecans, coconut and seeds. It is not a nut-free recipe and is not suitable for the AIP elimination phase. Replacing honey with maple syrup makes the listed recipe vegan, but does not remove its added sugar. For a gluten-free version, choose appropriately labeled ingredients and avoid cross-contact during preparation.

Changing the sweetener or ingredient ratios can change how well the clusters hold together. Try the base recipe before making several substitutions at once. Let each batch cool fully before judging its texture.

Serving and nutrition

Enjoy a small portion as a snack or as a topping for a breakfast bowl. Nutrition depends on your exact ingredients, substitutions and portion size. Use the labels on your ingredients and the amount you serve if you want to calculate nutrition for your batch.

Honey and maple syrup contribute added sugars, even though they are familiar pantry ingredients. The FDA guide to added sugars explains how these sweeteners fit into label comparisons.

Finish your breakfast bowl

Serve a little granola over your favorite breakfast bowl, then add a spoonful of Cinnamon Tiger Nut Butter or Carob Tiger Nut Butter for another flavor. Add the butter when serving rather than changing the granola’s baking ratios.
